Zesty avocado chimichurri on cucumber.
Ingredients
- 12 large cucumbers, sliced into 1/4-inch rounds
- 22 ripe avocados, diced
- 31/2 cup fresh parsley, finely chopped
- 41/4 cup fresh cilantro, finely chopped
- 53 cloves garlic, minced
- 63 tbsp red wine vinegar
- 71/4 cup olive oil
- 81/2 tsp dried oregano
- 91/4 tsp red pepper flakes
- 101/2 tsp sea salt

Finely chop parsley and garlic to make chimichurri sauce.

Mix chopped herbs with vinegar to create a tangy herb sauce.

Slice cucumber into thin rounds and arrange on a serving plate.
