Zesty lime cilantro cauliflower rice.

Ingredients

  • 11 large head cauliflower, riced (about 4-5 cups)
  • 22 tbsp olive oil
  • 31 large onion, finely diced
  • 43 cloves garlic, minced
  • 51/2 cup fresh cilantro, chopped
  • 6Juice of 2 limes
  • 7Zest of 1 lime
  • 81/2 cup vegetable broth
  • 91 tsp sea salt
  • 101/4 tsp black pepper

Instructions

    Rice the cauliflower by pulsing florets in a food processor until they resemble rice grains.

    Heat olive oil in a large skillet over medium heat.

    Sauté the diced onion and minced garlic until soft and fragrant, about 3-4 minutes.

    Add the riced cauliflower and vegetable broth, stirring to combine.

    Cook for 5-7 minutes, stirring occasionally, until cauliflower is tender but not mushy.

    Remove from heat and stir in fresh cilantro, lime juice, lime zest, salt, and pepper.
