Zesty lime cilantro cauliflower rice.
Ingredients
- 11 large head cauliflower, riced (about 4-5 cups)
- 22 tbsp olive oil
- 31 large onion, finely diced
- 43 cloves garlic, minced
- 51/2 cup fresh cilantro, chopped
- 6Juice of 2 limes
- 7Zest of 1 lime
- 81/2 cup vegetable broth
- 91 tsp sea salt
- 101/4 tsp black pepper

Rice the cauliflower by pulsing florets in a food processor until they resemble rice grains.

Heat olive oil in a large skillet over medium heat.

Sauté the diced onion and minced garlic until soft and fragrant, about 3-4 minutes.

Add the riced cauliflower and vegetable broth, stirring to combine.

Cook for 5-7 minutes, stirring occasionally, until cauliflower is tender but not mushy.

Remove from heat and stir in fresh cilantro, lime juice, lime zest, salt, and pepper.
