Warming curry split pea soup.
Ingredients
- 11 1/2 cups dried yellow split peas, rinsed
- 21 medium onion, diced
- 33 cloves garlic, minced
- 41-inch piece fresh ginger, minced
- 52 tbsp curry powder
- 61 tsp fennel seeds
- 71 3/4 cup organic coconut milk (carton style)
- 86 cups vegetable broth
- 92 tbsp olive oil
- 102 tbsp fresh lime juice
- 111 tsp sea salt
- 121/4 cup coconut chips for garnish
Instructions

In a large pot, sauté diced onions, minced garlic, and grated ginger until fragrant and softened.

Add yellow split peas, curry powder, and fennel seeds, stirring to coat the peas with the spices.

Pour in vegetable broth and bring the mixture to a boil, then reduce heat and simmer until the peas are tender and breaking down.

Stir in coconut milk and continue cooking until the soup reaches a creamy consistency.

Remove from heat, squeeze in fresh lime juice, and season with salt to taste.
