Silky red lentil soup with cumin.
Ingredients
- 11 1/2 cups red lentils, rinsed
- 22 medium carrots, diced
- 31 medium onion, diced
- 43 cloves garlic, minced
- 51 3/4 cup organic coconut milk (carton style)
- 66 cups vegetable broth
- 72 tbsp olive oil
- 81 tsp ground cumin
- 91 tsp ground turmeric
- 101/2 tsp ground coriander
- 111 tsp sea salt
- 122 tbsp fresh lemon juice
- 132 tbsp fresh cilantro for garnish

Sauté chopped onions, garlic, and carrots in a large pot until softened and fragrant.

Add red lentils, vegetable broth, and your chosen herbs and spices to the pot.

Simmer the mixture on medium-low heat, stirring occasionally, until lentils are tender and breaking down.
