Hearty herb-infused cabbage soup.

Ingredients

  • 11/2 head cabbage, chopped (about 6 cups)
  • 22 medium onions, diced
  • 33 medium carrots, diced
  • 43 celery stalks, diced
  • 54 cloves garlic, minced
  • 61-inch piece fresh ginger, minced
  • 73 tbsp olive oil
  • 88 cups vegetable broth
  • 91 tsp dried thyme
  • 101 tsp dried oregano
  • 111 tsp sea salt
  • 121/2 tsp black pepper
  • 132 tbsp fresh parsley for garnish

Instructions

    Chop cabbage, onions, carrots, celery, garlic, and ginger into small, uniform pieces.

    Heat olive oil in a large pot and sauté the chopped onions, garlic, and ginger until fragrant and softened.

    Add the remaining chopped vegetables to the pot and cook for 5-7 minutes, stirring occasionally.

    Pour in vegetable broth and add desired herbs and spices, then bring the mixture to a gentle simmer.
