Hearty herb-infused cabbage soup.
Ingredients
- 11/2 head cabbage, chopped (about 6 cups)
- 22 medium onions, diced
- 33 medium carrots, diced
- 43 celery stalks, diced
- 54 cloves garlic, minced
- 61-inch piece fresh ginger, minced
- 73 tbsp olive oil
- 88 cups vegetable broth
- 91 tsp dried thyme
- 101 tsp dried oregano
- 111 tsp sea salt
- 121/2 tsp black pepper
- 132 tbsp fresh parsley for garnish

Chop cabbage, onions, carrots, celery, garlic, and ginger into small, uniform pieces.

Heat olive oil in a large pot and sauté the chopped onions, garlic, and ginger until fragrant and softened.

Add the remaining chopped vegetables to the pot and cook for 5-7 minutes, stirring occasionally.

Pour in vegetable broth and add desired herbs and spices, then bring the mixture to a gentle simmer.

Cover the pot and let the soup cook on low heat for 20-25 minutes until vegetables are tender.
