Nourishing lentil soup with kale-turmeric.
Ingredients
- 11 1/2 cups lentils, rinsed
- 23 cups kale, chopped
- 32 cups spinach
- 42 medium carrots, diced
- 51 medium onion, diced
- 63 cloves garlic, minced
- 72 tbsp olive oil
- 86 cups vegetable broth
- 91 tsp ground cumin
- 101 tsp ground turmeric
- 111 tsp sea salt

Instructions

Rinse lentils and chop all vegetables into small, uniform pieces.

Heat olive oil in a large pot and sauté onions and garlic until fragrant.

Add chopped vegetables and lentils to the pot, then pour in vegetable broth.

Bring the soup to a boil, then reduce heat and simmer until lentils are tender.

Season with herbs and spices, stirring occasionally.
