Healing anti-inflammatory green soup.
Ingredients
- 11 lb chicken breasts, cubed
- 22 tbsp avocado oil
- 31/4 cup unsweetened coconut flakes
- 43 cups kale, chopped
- 52 cups spinach
- 61 cup broccoli florets
- 72 medium carrots, diced
- 81 medium sweet potato, cubed
- 91 medium onion, diced
- 104 cloves garlic, minced
- 111 bell pepper, diced
- 126 cups vegetable broth
- 131 tsp ground turmeric
- 141 tsp ground ginger
- 151 tsp sea salt
Instructions

Dice chicken breasts and sauté in avocado oil until golden and cooked through.

Chop all vegetables into roughly similar-sized pieces for even cooking.

In a large pot, combine cooked chicken, chopped vegetables, vegetable broth, and your selected herbs and spices.

Simmer the soup over medium heat until vegetables are tender and flavors have melded, approximately 20-25 minutes.

Garnish with shredded coconut and serve hot.

Optional: Stir in fresh chopped herbs just before serving for added brightness.
