Golden turmeric lentil coconut soup.
Ingredients
- 11 1/2 cups lentils, rinsed
- 22 tsp ground turmeric
- 33 cups kale, chopped
- 42 cups spinach
- 52 medium carrots, diced
- 61 medium onion, diced
- 73 cloves garlic, minced
- 81 3/4 cup organic coconut milk (carton style)
- 96 cups vegetable broth
- 102 tbsp olive oil
- 111 tsp ground cumin
- 121 tsp ground ginger
- 131 tsp sea salt

Rinse lentils and chop all vegetables into uniform pieces.

In a large pot, sauté onions and garlic until fragrant and translucent.

Add turmeric, other spices, chopped vegetables, and lentils to the pot, stirring to combine.

Pour in vegetable broth and coconut milk, then bring the mixture to a gentle simmer.
