Creamy mashed cauliflower faux-potatoes.
Ingredients
- 11 large head cauliflower (about 1.5 lbs), cut into florets
- 23 cloves roasted garlic, chopped
- 31/4 cup olive oil or ghee
- 41/4 cup minced chives (optional)
- 51/2 tsp sea salt
- 61/4 tsp black pepper
Instructions

Cut cauliflower into florets and pat completely dry with paper towels.

Place cauliflower in a food processor and pulse until it reaches a rice-like consistency.

Heat olive oil or ghee in a large skillet and add minced garlic, sautéing until fragrant.

Add riced cauliflower to the skillet and cook, stirring frequently, until it becomes tender and slightly golden.

Season with salt to taste and continue cooking until the cauliflower reaches a fluffy, potato-like texture.
