Vibrant coconut green detox soup.
Ingredients
- 13 cups kale, chopped
- 22 cups spinach
- 31 cup broccoli florets
- 41 3/4 cup cooked chickpeas (from 3/4 cup dried, organic)
- 51 cup cooked lentils
- 62 tbsp olive oil
- 71 3/4 cup organic coconut milk (carton style)
- 86 cups vegetable broth
- 93 cloves garlic, minced
- 101 medium onion, diced
- 111 tsp sea salt
- 121/4 tsp black pepper
Instructions

Chop all vegetables into roughly similar-sized pieces to ensure even cooking.

In a large pot, sauté onions and garlic in olive oil until fragrant and translucent.

Add chopped vegetables, beans, lentils, and vegetable broth, then simmer until vegetables are tender.

Stir in coconut milk and blend the soup using an immersion blender until smooth and creamy.
