Bright springy pea-asparagus soup.
Ingredients
- 12 cups fresh or frozen green peas
- 21 lb fresh asparagus, trimmed and chopped
- 31/2 cup fresh parsley, chopped
- 41 medium onion, diced
- 52 cloves garlic, minced
- 62 tbsp olive oil
- 74 cups vegetable broth
- 81 tsp sea salt
- 91/4 tsp black pepper

Dice the onion and mince the garlic, then sauté in olive oil until softened.

Add green peas and asparagus to the pan, cooking until they are bright green and tender-crisp.

Pour in vegetable broth and simmer the vegetables for 5-7 minutes.

Finely chop fresh parsley and sprinkle over the vegetables just before serving.

Season with salt and pepper to taste, and serve hot as a side dish or light meal.
