Silky homemade pumpkin puree.
Ingredients
- 11 sugar/pie pumpkin (2-3 lbs)
- 21 tbsp olive oil or coconut oil
- 31/4 tsp sea salt (optional)
Instructions

Cut the pumpkin in half and scoop out the seeds and stringy pulp.

Drizzle the pumpkin halves with olive oil and place cut-side down on a baking sheet.

Roast in a preheated oven until the pumpkin is tender and easily pierced with a fork.

Let the pumpkin cool, then scoop out the flesh and puree or mash until smooth.

Use the pumpkin puree in your favorite pie recipe or other dishes.
