Kale and Brussels Sprout Salad

Crunchy kale-Brussels with lemon-berries.
Ingredients
- 14 cups fresh kale, stems removed and chopped
- 22 cups Brussels sprouts, shaved or thinly sliced
- 33 tbsp olive oil
- 42 tbsp fresh lemon juice
- 51/2 tsp sea salt
- 61/4 tsp black pepper
- 71/2 cup fresh berries (blueberries, raspberries) for topping

Wash kale and Brussels sprouts thoroughly, then pat dry with paper towels.

Thinly slice Brussels sprouts and roughly chop kale into bite-sized pieces.

In a large bowl, toss the vegetables with your chosen healthy oil and herbs/spices.

Let the salad sit for 5-10 minutes to allow the kale to soften slightly.

Top the salad with fresh berries just before serving.

Serve immediately at room temperature or chilled.
