Bright lemon-pepper roasted asparagus.
Ingredients
- 11 lb fresh asparagus, trimmed
- 22 tbsp olive oil
- 32 tbsp fresh lemon juice
- 41 tsp lemon zest
- 51/2 tsp black pepper, freshly ground
- 61/2 tsp sea salt

Trim the woody ends off the asparagus spears by snapping or cutting them.

Toss the asparagus with olive oil, ensuring each spear is lightly coated.

Arrange the asparagus in a single layer on a baking sheet.
