Savory lentil-stuffed zucchini boats.

Ingredients

  • 14 medium zucchini, halved lengthwise
  • 21 cup cooked lentils
  • 31 cup primal tomato sauce
  • 41/2 cup diced onion
  • 52 cloves garlic, minced
  • 61 tbsp olive oil
  • 71 tsp dried Italian herbs (oregano, basil, thyme)
  • 81/2 tsp sea salt
  • 91/4 tsp black pepper

Instructions

    Cut zucchini in half lengthwise and scoop out the seeds to create boat-like shells.

    Mix cooked lentils with herbs and tomato sauce in a mixing bowl.

    Spoon the lentil mixture into the zucchini boats, filling each one generously.

    Bake the stuffed zucchini boats in a preheated oven until the zucchini is tender and the filling is heated through.
