Savory lentil-stuffed zucchini boats.
Ingredients
- 14 medium zucchini, halved lengthwise
- 21 cup cooked lentils
- 31 cup primal tomato sauce
- 41/2 cup diced onion
- 52 cloves garlic, minced
- 61 tbsp olive oil
- 71 tsp dried Italian herbs (oregano, basil, thyme)
- 81/2 tsp sea salt
- 91/4 tsp black pepper

Cut zucchini in half lengthwise and scoop out the seeds to create boat-like shells.

Mix cooked lentils with herbs and tomato sauce in a mixing bowl.

Spoon the lentil mixture into the zucchini boats, filling each one generously.

Bake the stuffed zucchini boats in a preheated oven until the zucchini is tender and the filling is heated through.
