Zesty lime-cumin cauliflower rice.
Ingredients
- 11 large head cauliflower, riced
- 22 tbsp olive oil
- 31/2 medium onion, diced
- 42 cloves garlic, minced
- 52 tbsp tomato paste
- 61 tsp ground cumin
- 71/2 tsp chili powder
- 82 tbsp fresh lime juice
- 91/2 tsp sea salt
- 101/4 tsp black pepper
- 112 tbsp fresh cilantro, chopped

Pulse cauliflower in a food processor until it resembles rice-like grains.

Heat olive oil in a large skillet and sauté diced onion and minced garlic until softened.

Add cauliflower rice to the skillet and stir in tomato paste, cumin, and chili powder.

Cook the cauliflower mixture, stirring occasionally, until it's tender and lightly browned.

Remove from heat, season with salt and pepper, and squeeze fresh lime juice over the top.
