Hearty Moroccan sweet potato stew.

Ingredients

  • 12 medium sweet potatoes, peeled and cubed
  • 21 cup dried lentils, rinsed
  • 34 cups fresh kale or spinach, chopped
  • 42 medium carrots, diced
  • 51 medium onion, diced
  • 63 cloves garlic, minced
  • 71 bell pepper, diced
  • 82 tbsp olive oil
  • 96 cups vegetable broth
  • 101 tsp ground cumin
  • 111 tsp ground coriander
  • 121/2 tsp ground cinnamon
  • 131 tsp sea salt
  • 141/4 tsp black pepper

Instructions

    Dice sweet potatoes and prepare other vegetables by chopping into uniform pieces.
