Warmly spiced Moroccan lentil soup.
Ingredients
- 12 medium sweet potatoes, peeled and cubed
- 21 cup dried lentils, rinsed
- 31 medium onion, diced
- 43 cloves garlic, minced
- 52 medium carrots, diced
- 66 cups vegetable broth
- 72 tbsp olive oil
- 81 tsp ground cumin
- 91 tsp ground coriander
- 101/2 tsp ground cinnamon
- 111/4 tsp chili powder
- 121/8 tsp cayenne pepper
- 132 tbsp fresh lime juice
- 141 tsp sea salt

Peel and dice sweet potatoes, carrots, and onions into roughly similar-sized pieces.

In a large pot, sauté onions and garlic in olive oil until fragrant and translucent.

Add lentils, diced vegetables, spices, and vegetable broth, then bring to a simmer and cook until lentils and vegetables are tender.

Stir in lime juice and adjust seasonings to taste.
