Vibrant crunchy citrus cabbage slaw.
Ingredients
- 11/2 head red cabbage, thinly sliced (about 4 cups)
- 22 medium carrots, shredded
- 33 tbsp olive oil
- 42 tbsp fresh lemon juice
- 51 tbsp apple cider vinegar
- 61 clove garlic, minced
- 71/2 tsp sea salt
- 81/4 tsp black pepper
- 91/2 cup fresh berries for topping (optional)

Finely shred the red cabbage and grate the carrots into thin strips.

In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, minced garlic, salt, and pepper to create the dressing.

Pour the dressing over the cabbage and carrots, then toss thoroughly to coat all the vegetables.

Let the salad sit for 10-15 minutes to allow the flavors to blend and the cabbage to soften slightly.
