Spiced Black Beans with Turmeric

Earthy turmeric-spiced black beans.
Ingredients
- 13 1/2 cups cooked black beans (from 1 1/2 cups dried, organic)
- 21 small head cauliflower, cut into florets
- 31 tsp ground turmeric
- 42 tbsp olive oil
- 54 cloves garlic, minced
- 61 medium onion, diced
- 71 tsp ground cumin
- 81/2 tsp chili powder
- 91 cup vegetable broth
- 101 tsp sea salt
- 111/4 tsp black pepper
- 122 tbsp fresh cilantro for garnish
Instructions

Sauté diced onions and minced garlic in olive oil until fragrant and translucent.

Add black beans, cauliflower, turmeric, cumin, and chili powder to the pan and stir to combine.

Pour in vegetable broth and simmer the mixture over medium-low heat until beans are tender and liquid reduces.

Taste and adjust seasonings, adding salt and pepper as needed.

Serve the spiced black beans hot, garnished with fresh herbs if desired.
