Savory ginger veggie dumpling filling.
Ingredients
- 12 cups kale, finely chopped
- 21 cup spinach, finely chopped
- 31 cup broccoli, finely chopped
- 42 medium carrots, shredded
- 51 3/4 cup cooked chickpeas (from 3/4 cup dried, organic), mashed
- 62 tbsp olive oil
- 73 cloves garlic, minced
- 81-inch fresh ginger, minced
- 92 tbsp coconut aminos (soy-free)
- 101/2 cup organic coconut milk (carton style)
- 111/2 tsp sea salt
Instructions

Finely chop all vegetables and mince garlic.

Sauté vegetables in olive oil until softened and slightly caramelized.

Add cooked chickpeas and stir to combine with vegetables.

Season with herbs and spices, then deglaze pan with coconut milk.
