Creamy smoky tahini zucchini dip.
Ingredients
- 12 large zucchini (about 1 lb), halved lengthwise
- 22 tbsp olive oil, plus more for drizzling
- 31/2 tbsp sea salt
- 41 small clove garlic, minced
- 52 tbsp fresh lemon juice
- 61/2 cup tahini
- 71/4 cup water
- 82 tbsp fresh parsley, chopped
Instructions

Grill or roast zucchini until softened and lightly charred on all sides.

Let zucchini cool, then roughly chop and drain any excess liquid.

In a food processor, blend zucchini with garlic, tahini, lemon juice, and salt until smooth.

Drizzle olive oil on top and stir to incorporate.

Chill in refrigerator for at least 30 minutes to let flavors meld.
