Light legume-free zucchini hummus.
Ingredients
- 11 cup zucchini, peeled and diced
- 21/2 cup raw tahini
- 33 tbsp fresh lemon juice
- 42 cloves garlic, minced
- 51 tsp ground cumin
- 61/2 tsp sea salt
- 72 tbsp olive oil
- 81/4 tsp black pepper

Roughly chop the peeled zucchini and place in a food processor.

Add tahini, lemon juice, minced garlic, and ground cumin to the food processor.

Blend the ingredients until smooth and creamy, stopping to scrape down the sides as needed.

Taste the hummus and adjust seasonings, adding more salt, lemon juice, or cumin if desired.

Transfer to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of paprika.

Serve immediately with pita chips, vegetable sticks, or as a spread.
